CHICKEN WATERCRESS SANDWICHES

  • 12 slices of whole wheat bread
  • 1 pound broiled chicken
  • 1/2 c. mayonnaise
  • 1 bunch watercress

Cut crust off bread and spread with mayonnaise. Top with chicken and watercress. Cut sandwich in half.

CUCUMBER SANDWICHES

  • 8 slices of white bread
  • 1/4 c. cream cheese, softened
  • 1 small garlic clove, minced
  • mint leaves, chopped
  • 2 cucumbers, peeled and sliced
  • salt
 

Cut crust off bread. Mix cream cheese, garlic, and mint. Spread mixture onto bread. Layer with cucumbers and sprinkle with salt. Cut finished sandwich into four triangles.

PAVLOVA

  • 2 t. cornstarch
  • 4 egg whites
  • 3/4 c. sugar
  • 1 t. vanilla
  • 1 t. vinegar
  • 1 1/4 c. heavy cream
  • assorted fresh fruits and/or chocolate shavings

 

Preheat oven to 250°. Grease large baking sheet. Line with wax paper and grease again. Dust with cornstarch. Draw an 8" circle in center of baking sheet (a cake pan makes an excellent guide). Beat egg whites until soft peaks appear (about 1 minute). Add sugar a tablespoon at a time, beating continually. Continue beating until sugar is completely dissolved and egg whites are glossy. Beat in vanilla and vinegar. Spread mixture into circle on baking sheet. Bake at 250° F for 1 hour and 15 minutes. Let pavlova cool completely in oven (leave the door ajar). Carefully remove pavlova from wax paper and set on serving plate. For topping, beat heavy cream in bowl until stiff peaks appear. Top cooled pavlova with cream and decorate with fresh fruit and/or chocolate shavings.

SCONES

  • 2 1/2 c. flour
  • 1/2 t. salt
  • 1/2 t. sugar
  • 2 sticks cold unsalted butter, cut into small pieces
  • 1/2 c. ice water
  • 1/2 c. cold butter
  • 3/4 c. milk
  • 2 eggs

 

Combine flour, sugar, salt, and baking powder. Cut in butter with pastry blender until mixture resembles coarse crumbs. Combine milk and eggs, saving out one egg white. Pour into flour mixture and stir until combined. Knead dough until surface is not sticky. Divide in half. Form each half into a flattened circle. Place circles onto baking sheet. Cut each one into eight wedges with floured knife. Brush with egg white and sprinkle with sugar. Bake at 375° F for 22-25 min. Serve with jam and unsweetened whipped cream.
